Baked Apples Over Greek Yogurt

Well, this is a little embarrassing. As I leaned in to take a bite of this sweet, tangy, spicy dessert-posing-as-breakfast, I actually drooled onto my plate. Apologies for my table manners, but I couldn't have conveyed the deliciousness of this dish any better.

It smells like apple pie. See, now you're salivating, too.

Ingredients:
  • 1 Tbsp coconut oil
  • 2 apples, cored and roughly sliced
  • 1/2 to 1 C plain Greek yogurt
  • Brown sugar
  • Cinnamon
  • All-Spice
  • Sea salt & pepper

Directions:
  1. Pre-heat oven to 350° F.
  2. Spoon coconut oil into a cast-iron skillet and place the skillet into the oven to heat through.
  3. Once skillet and coconut oil are hot, add apples.
  4. Bake for 30-40 minutes, turning apples over halfway through, until cooked through and slightly caramelized.
  5. Spoon yogurt onto a serving dish or individual dishes, then top with apples.
  6. Sprinkle with brown sugar, cinnamon, all-spice, salt, and pepper to taste.
Serves 1-2.
