Green Smoothie (Yum?)

I've found that the least painful method of getting spinach into my family's tummies is to hide it!  Throw it into a sauce, soup, or casserole... cover it with cheese if possible.  If they don't notice it, they won't try to avoid it!

Today I decided to be a bit more "in yo face!" about serving spinach.


I let spinach's gorgeous green coloring shine in an easy, healthy smoothie that tasted more of apple than of leaves.  Curiosity convinced everyone to accept a mugful, and the flavor was friendly enough to banish the possibility of leftovers.

Ingredients:
  • two large handfuls of spinach, rinsed and spun dry
  • one apple, cored and sliced
  • 1.5 C vanilla soy milk
Directions:
  1. Blend all ingredients in blender.
  2. Enjoy!
Notes: Spinach's flavor is pretty easy to mask, but if you decide to add other fruits, I recommend choosing fruits that will enhance rather than muddy up the color.  In my opinion, a brown smoothie looks less appetizing than a green one.
