Black Bean Soup

Another one-pot wonder!  The canned black beans had jalapenos in them that gave the soup a good amount of heat.  Use a different canned bean or add avocados, cheese, and/or sour cream tone down the spiciness, if needed.

Hey, don't skimp on the bacon!  You will regret it!  LOL.


Ingredients:

  • 2 cans black beans (drained)
  • water (a little more than enough to cover the beans)
  • 1 onion (chopped)
  • 2 tsp vegetable broth powder
  • 1/2 tsp garlic powder
  • 1 tsp cumin
  • bacon (already cooked, chopped)
  • cilantro (chopped)

Directions:
  1. Combine beans, water, and onion in a pot.  Bring to a boil, then lower to simmer.
  2. Add broth powder, garlic powder, cumin, and bacon.  Simmer for 15 minutes.
  3. Stir in cilantro.
  4. Enjoy!
