Saturday Morning Casserole

So easy!  Gather your leftovers from the work week, toss them into this casserole, set the oven timer, and--the best part--go back to bed. Ahh, don't you love Saturday mornings?


Ingredients:
  • 1/4 C chopped red onions
  • 8 small chicken sausages
  • Leftovers of your choosing
  • 6 eggs
  • Soy milk (optional)

Directions:
  1. Preheat oven: 350 degrees Fahrenheit.
  2. Brown the onions in a skillet, then add the sausage and brown them, too.  Put them into a 9" oval casserole dish.
  3. Add leftovers.  I had green beans, ham, and a couple of Bisquik biscuits which I tore apart and added to the mix.
  4. In one of the empty leftover containers (we are working efficiently here), beat or whisk 6 eggs with a little bit of soy milk.  Pour the egg mixture into the casserole dish.
  5. Bake for 25-30 minutes or until the eggs are set.
