Ingredients:
- 1/4 C chopped red onions
- 8 small chicken sausages
- Leftovers of your choosing
- 6 eggs
- Soy milk (optional)
Directions:
- Preheat oven: 350 degrees Fahrenheit.
- Brown the onions in a skillet, then add the sausage and brown them, too. Put them into a 9" oval casserole dish.
- Add leftovers. I had green beans, ham, and a couple of Bisquik biscuits which I tore apart and added to the mix.
- In one of the empty leftover containers (we are working efficiently here), beat or whisk 6 eggs with a little bit of soy milk. Pour the egg mixture into the casserole dish.
- Bake for 25-30 minutes or until the eggs are set.
